CHARCUTIER MANAGER

Job Overview:

 

We’re Bite by Bite & Co., a small (but very rapidly expanding) charcuterie business and are looking for an amazing Charcutier Manager to oversee the operations of our Glen Allen, VA location. From large grazing tables to single charcuterie platters and boxes, we service all things charcuterie!

 

We are seeking an experienced and passionate Charcutier Manager to oversee and manage the daily operations of our charcuterie kitchen. The ideal candidate has previous kitchen experience, preferably in a management role, exceptional leadership and organizational skills, and ideally, a love for charcuterie!
 

Responsibilities:

 

Charcuterie Creation:

  • Serve as the creative director for all grazing table creation (range of 2.5 foot - 5 foot boards) 

  • Map out Grazing Table display and set up visions for Grazing Tables including appetizers, decor, etc.

    • Grazing Table delivery and set up as needed

  • Sole creator of our signature Bite by Bite & Co. Cheese Dips

  • Create designs of our seasonal and holiday platters and specialty items

  • Oversee all kitchen staff as small orders such as platters, boxes, cups, etc. are created and ensure quality standards are met

  • Other duties as assigned

 

Administrative:

  • Manage scheduling of the kitchen in accordance to the weekly workload

  • Develop efficient and cost effective task assignment processes

  • Receive incoming orders and clearly communicate to the team and delivery service 

  • Food and materials inventory management to develop cost effective grocery lists for shopper to follow, grocery shopping as needed 

  • Track all outside receipts (shipping, shopping, etc)

 

Team Leadership and Management:

  • Lead and motivate the kitchen team, fostering a positive and collaborative work environment

  • Conduct training sessions to educate staff on techniques, safety procedures, and quality standards

  • Implement and enforce strict quality control measures to maintain high standards of quality, taste and appearance

  • Ensure that all kitchen staff adhere to food safety and sanitation standards

Supervision

  • Provide day-to-day supervision of staff through coaching, mentoring, conflict resolution strategies, and support of ongoing performance management practices.​

  • Ensure all employees comply with company rules, policies, procedures and regulations, while meeting established productivity targets.

  • Communicate job expectations and responsibilities, while supervising, disciplining, managing and overseeing employees and work systems.

  • Bite by Bite & Co. holds high level hygiene and grooming standards that must be maintained

  • Ability to work in a fast-paced environment and make quick decisions

  • Must be able to stand for up to 8 hours; to lift up to 50lbs. 

  • Must have a Food Handlers License or a willingness to obtain one

  • Reliable vehicle with the ability to transport up to a 5 ft board for event set ups (most standard sedans with split folding rear seat can accommodate!)

40 hours a week 5 days a week. Every other Saturday shift required, occasional Sundays

 

$18 - $20 / hourly + tips, mileage reimbursement, and bonuses

 

Reports to CEO

1 week of shadowing in the kitchen

Training and onboarding (60 day probationary period)
